“Think global, act local” has been a grassroots mantra for years. Utopia llc is a local upstart offering a unique mini-restaurant with a catchy menu; a street-food venue and a “think outside the box” approach to catering. By teaming with local producers Utopia llc hopes to ‘keep it simple, local and fresh.’ Turning fresh local produce and meat into global comfort foods gives the food a distinctly vibrant flavor, all while stimulating Sioux Falls’ local small businesses. Add an interest in supporting theatre, music and culture and a pretty interesting picture begins to form.
Utopia seeks non-traditional catering events like backyard bbq’s, reunions, tailgate parties, birthdays, CD release parties or anything unique. Using their customized catering trailer (‘the Utopian Mothership’) and drawing on experience from living and cooking abroad, Utopia’s chefs Tony and Josh Kellar (both Sioux Falls natives) are clearly running a different race than their counterparts. Even their flagship store TK’s Greatest Hits is outside the box. Guests enjoy signature breakfast and lunch selections with a snicker (the underlying humor in Tony’s menu is…edgy) while watching the action on the airstrip.
“Street-food” (casual ethnic and local food sold “to-go” from a small, portable wagon near a busy street) is a $40 billion a year industry offering hungry folks on the go a myriad of flavors, styles and ethnicities as well as a personal connection with the guy making your food. Utopia will offer about 4 or 5 choices per day on a constantly changing basis. (As soon as the Pad Thai is gone, they’ll try some fish tacos or paella. Banh Mi sandwiches. Miami-style Cuban sandwiches, signature burgers & sandwiches from TK’s or gourmet ‘Acoustic’ pizzas. Tom Yam soup. Kabobs. Bacon candy. Who knows?) Think global, buy local, keep it fresh. Eat Utopia.
